Ingredient List

  • 1 lbs wild-caught cod fillets, rinsed and patted completely dry with paper towels

  • ⅓ cup flour (gluten-free flour works well) 

  • 1  tsp salt

  • 1  tsp ground pepper

  • 4 tbsp butter

  • 2  tbsp olive oil (or grapeseed oil)

  • 1 tsp fresh thyme

  • ½ cup chicken stock

  • ⅓ cup fresh lemon juice

  • 1 shallot, finely chopped

  • 1 garlic clove, minced

  • ¼ cup of capers, well drained

  • ¼ cup fresh parsley, finely chopped

  • ⅓ cup grated parmesan cheese (optional)


Directions

Step 1 — Make sure all ingredients are measured and/or prepared according to the ingredients list before beginning. Preheat oven to 170°F or “warm” setting. Place 2 tablespoons oil and 2 tablespoons butter in a large skillet on medium high heat. While oil/butter is warming, season the cod fillets with salt and pepper then dredge completely with flour. Shake off any excess flour. When the oil is sizzling hot, add cod and cook for 2-3 minutes each side until golden brown turning only once. Transfer the browned fillets to a cookie sheet and place in the preheated oven to keep warm.

Step 2 — In the same skillet on medium heat, add 1 tablespoon of oil (if needed). When hot, add shallots, thyme, and garlic. Saute and stir for about 1 minute until the aroma is released. Add chicken stock, lemon juice, and capers scrapping any browned bits from the bottom of the pan. Cook until the sauce has been reduced by one-third. Add salt and pepper to taste if needed.

Step 3 — Add remaining 2 tablespoons butter to the pan whisking vigorously. Sauce will begin to thicken slightly as the butter melts and is incorporated. Remove cod from the oven and add back to the pan turning to coat with the sauce. Reduce to simmer for about 5 minutes. Remove cod fillets to plates, top with sauce, and sprinkle with parsley and parmesan cheese.
