Well, you’ve found it: this is straight-up Asian comfort food! Look no further. Coconut-kissed rice topped with a sesame-laced veggie chicken sauce makes its own one-bowl happy meal.

Ingredient List
1 lbs ground chicken
⅓ cup green onion, diced
1 cup broccoli florets or broccolini, chopped
½ cup fresh green beans
1 small birdseye red chili, seeded, deveined, and chopped
2 garlic cloves, chopped
2 tbsp peanut oil
1 tsp sesame oil
1 tsp fresh grated ginger
¼ cup low-sodium soy sauce
1 tbsp hoisin sauce or honey
2 tbsp Gochujang
½ tsp crushed red pepper flakes (optional)
1 cup white jasmine rice, rinsed and drained
1 cup coconut milk
1 cup water
1 tbsp butter
¾ tsp salt
1 tbsp toasted sesame seeds
¼ cup cilantro, chopped
Directions
Step 1 — In a small mixing bowl whisk together ¼ cup water with soy sauce, sesame oil, hoisin, Gochujang, and red pepper flakes. Set aside. In a medium saucepan, add rinsed rice, coconut milk, water, butter, and salt. Stir to combine. Put heat on high and bring to a boil, cover, and reduce heat to low simmering until all liquid is absorbed about 15-20 minutes.
Step 2 — Place 1 tablespoon peanut oil in a large skillet and heat on medium high heat. Add ground chicken breaking it up with a wooden spoon into small pieces as it fries cooking it through about 5 minutes. Add ginger, garlic, green onion, and chili to the meat and cook for 1 minute. Add 1 tablespoon peanut oil to the meat then add the broccoli and green beans and cook until softened about 5 minutes stirring occasionally to avoid burning.
Step 3 — Pour sauce over chicken and veggie mixture mixing to incorporate sauce throughout, cover, simmer on low heat for 10 minutes.
Step 4 — Remove rice from heat. Assemble the bowls with a generous ladleful of coconut rice, about 2/3 cup of chicken mixture, sesame seeds, and cilantro.
